Holbrook is a hard mature goat's milk cheese made by St James Cheese near Cartmel, Cumbria. It takes the name from the late Mary Holbrook, the creator of some classic British artisan cheeses and a great inspiration to Martin Gott of St James
 
Current cheeses are particularly mature - like a spicy, goat Manchego! Epic with honey
