Our suggestion
Cut the young ones in half and grill them, cut side up, serve traditionally with grilled endive and pears or experiment with jam or marmalade! A hard mature Crottin needs a bottle of Sancerre, Poully Fume or Quincy opening, along with another goaty friend from the Loire - how about a Selles-sur-Cher?
