Cropwell Bishop Stilton PDO

Cropwell Bishop’s classic blue Stilton cheese in Nottinghamshire. Stilton can only be legally made in three counties - Derbyshire, Nottinghamshire and Leicestershire, and producers have to follow traditional recipes that have been around for generations. Cropwell Bishop is carefully crafted by hand, using methods that have changed little since the 17th Century. It is made using vegetarian rennet, and around 78 litres of fresh milk, sourced locally to the creamery. To allow this Stilton to develop its unique flavour, it is aged for up to 12 weeks.

    Blue Stilton is such a versatile cooking cheese, it is equally at home in a pear and walnut salad as in a rich sauce for a centrepiece cut of meat. The classic Port & Stilton combo is certainly a winner, though try the King of the Blues with a apricot tinged dessert wine or a sweet sherry
