The classic blue Stilton cheese, made by Colston Bassett. One of the smallest Stilton creameries, Colston Bassett still hand ladles their curds and has only has 4 head cheesemakers since the 1920s, testament to the dedication to the craft

    Blue Stilton is such a versatile cooking cheese, it is equally at home in a pear and walnut salad as in a rich sauce for a centrepiece cut of meat. The classic Port & Stilton combo is certainly a winner, though try the King of the Blues with a apricot tinged dessert wine or a sweet sherry
