A rich cheese made in early summer 2022 from a small herd of cow grazed at high altitude in the Bernese Oberland region of Switzerland. Flavourwise, think of a powerful, brothy union between the a rich Simmentaler Swiss Gruyere and a sharp, fruity Parmigiano Reggiano
