We stock a wonderful Gruyère de Comté in a couple of different maturations, two matured by affineurs Hennert Brothers of Carvin, NE France


Comté Extra Vieux is matured for around 14 months, think classic milky notes with a rounded tomato soup savoury quality. An excellent Gruyère for the kitchen and a mellow addition to your cheeseboard


Comté Reserve is dense, savoury and nutty - this version is matured on the producers' wooden shelves and has a clean rind


Comté Prestige is aged for a minimum of 36 months, becoming richer and spicier with age, the rough rind, pitted by the activity of cheese mites, adds to the complexity of the flavour profile. This well aged example has a superb flavour with develops and changes on the palate for many minutes, a truly incredible cheese

    Tiny shards of the intense Prestige Comté brings a depth to a fresh salad or a new dimension to bresaola and rocket. Bourgogne-Franche-Comté has an excellent sparkling wine, Crémant du Jura Blanc, which makes a surprising partner for such a rich cheese
